With recent weather, it seems as if summer is around the corner! One of my favorite things about summer is how amazing all fruits taste, and melons have always been a favorite of mine. Thus, I took inspiration to make some cantaloupe ice cream to help cool down on the hot days. The recipe that I used is originally from this blog. Today, I will walk you through the recipe.
For this recipe you will need:
3 egg yolks
1/2 cup sugar
1 cup whipping cream
1 tsp vanilla extract
Step 3: Separate 3 egg yolks from whites
Step 4: add 1/2 cup sugar to bowl with egg yolks
Step 5: add 1 tsp vanilla to mixture
Step 6: put bowl on a pot of boiling water and whisk until light and creamy, about 5 minutes
Step 7: whip 1 cup heavy cream until you get light, stiff peaks
Step 8: fold in egg mixture with whipped cream
Step 9: slowly fold in cantaloupe pulp until there are no lumps
Step 10: pour your mixture into a deep baking dish and freeze for at least 4 hours
Step 11: Take out of freezer and enjoy!
And that is how you can make yourself a delicious, slightly healthier than the store bought variety ice cream! This method works with many flavors, and it is super easy and does not require an ice cream maker.
