Always waking up late for school and don't have time to eat? Early mornings will do that to you. But with these frozen yogurt granola bars, you are guaranteed breakfast on the busiest of mornings. Plus, it is healthier for you too!
You Will Need:
1 cup granola ( more if you want a thicker layer)
4 flavored yogurts ( use less if you want a thinner layer)
2 tbsp butter
2 tbsp peanut butter
toppings ( I used berries, chocolate chips, and peanut butter)
1. Add the butter and peanut butter together into a microwave-safe bowl. Then, microwave for 30 seconds. If your granola is plain, you might want to add a bit of honey too.
2. Add in the granola and mix until the oats are coated with the mixture.
3. Place granola in pan and spread out evenly until it is flat.
4. Next, spread the yogurt flavor of your choice ( I used half vanilla, half strawberry) over the oats until thickly coated.
5. Add on toppings of choice. ( I used berries on the strawberry yogurt, and chocolate chips + peanut butter with the vanilla yogurt.)
6. Here is what mine looked like before going into the freezer. Place in the freezer for 3-4 hours ( overnight is best).
7. Cut the brick into small sized-bars and you are finished.
Your gorgeous frozen granola-yogurt bars are finished! These are perfect for a quick grab when you are running late, and are also a alternative to a store-bought granola bar. Less ingredients, less worries. Breakfast is the most important meal of the day, and you are healthier overall when you eat. Honestly, they taste amazing on a hot school morning .

This is a no-nut recipe that works great to make loafs, muffins, and even mini muffins. Let me know of the formatting of this post because I am not sure about how many pictures there are. But trust me, these muffins are going to be your next favorite snack. Breakfast time has never tasted better!
Before the instructions, I just wanted to show these really cute muffin tins I got from the Christmas Tree Shops. They say "One yummy treat can sweeten someone's day," on the bottom. This is really cute for an event or a gift because people will find the surprise quote on the bottom. I just thought these were adorable!
1. Pre-heat the oven to 350 degrees Fahrenheit.
2. Place/prep muffin tins or loaf pan. (note: if baking in a loaf, grease the bottom of the pan)
3. Peel the bananas and place in a medium/large bowl. Smash bananas with a whisk until it turns into an almost liquid substance.
4. Next, add the eggs. During this process I got a little eggshell in the bowl, and I thought it would be a great opportunity to offer a life hack. When you get a piece of eggshell in the bowl, use half of the cracked shell to lift the piece out. It's mess free and gets you back to cooking in no-time.
5. Add in the vanilla, sugar, and yogurt. I found it helpful to use a spatula when getting out the yogurt, because it can be quite thick
6. After, add the baking soda and the melted butter.
7. Lastly, add the flour. Do this slowly while mixing to minimize the mess.
When you are done, your batter should look somewhat like this:
If you are making it in muffin form, as I am, fill the tins 3/4 of the way full. This will give the bread just enough room to rise
The banana bread has to bake for 55-60 minutes. Depending on what size muffin tin you use, the time could be shortened. They are done when the tops are a dark, crispy brown.
